Diagnosed with autoimmune gastritis in 2018\, she has since devoted considerable attention to researching the condition and developing an evidence-informed framework for its treatment. Her work has been published in the scientific journal Nutrients. \nLori has taught clinical nutrition to medical students\, helped develop and lead the graduate Integrative and Functional Nutrition program at Saybrook University\, and maintains a nutrition consulting practice\, Save Your Plate. She is currently pursuing a Doctorate in Clinical Nutrition (DCN) at Rutgers School of Health Professions\, focusing on autoimmune gastritis and pernicious anemia.
